No. The alt text stays on your images exactly as if you had typed it in by hand — it lives on Shopify's own media records, not inside our app.
The reverse is worth knowing too: if you want your original alt text back, use Restore original alt text on the Logs page before you uninstall. Once the app is removed it can no longer reach your store to undo anything.
